Ingredients
3 skinless, boneless chicken breasts
3 slices of swiss cheese
3 slices of deli ham
2 t paprika
2 T butter
1/2 cup white wine
1 tsp powdered chicken bouillon
1 T cornstarch
1 cup cream
Directions
Slice chicken into thin slabs, and place a slice of ham and cheese in the center of each. Fold each piece of chicken in half and secure with toothpicks. Sprinkle chicken with paprika.
Heat butter in a skillet, cook chicken until browned on both sides. Add wine and bouillon and let simmer for 25 minutes until cooked. Remove chicken to plates. Add cornstarch and cream to skillet and whisk together until thickened, pour over chicken and serve.

Irish Soda Bread
Ingredients
4 cups flour
2 1/2 tsp salt
1 tsp baking soda
1/3 cup sugar
1 T caraway seeds
1 cup raisins
2 cups buttermilk **
1 egg
Directions
Combine all ingredients, adding an additional ¾ cup of flour as necessary to create a dough and shape it into a rounded loaf cutting a cross into the top. Place on a greased baking sheet and bake for 40 minutes at 350.
**To make buttermilk combine 3 T of either lemon juice or cream of tarter with 2 cups of milk, stir and let sit for a few minutes until thickened.
