Poached Chicken with Lemon Sauce

Ingredients
2 T olive oil
1 onion chopped
1/2 cup white wine
1/2 cup chicken stock
1/2 tsp thyme
1 1/2 lbs chicken tenderloins
2 T lemon juice
salt and pepper

Directions
Heat oil in skillet, add onion and cook until soft, add wine, chicken stock and thyme and bring to a boil. Add chicken and lower heat, cover and simmer until cooked through.

Remove chicken from sauce, turn heat back up and add lemon juice, when sauce is down to 3/4 cup, season with salt and pepper, add chicken to reheat, and serve.
